This two-function whisk is part of the "Essentiel de patisserie" designed by Matali Crasset with Alessi. "Essentiel de patisserie" arose from a friendship and from a meeting which connects the designer Matali Crasset and the pastry cook Pierre Hermé : tools which get to the point.This ustensil combines two elements : a whisk with elastic wires and a corolla equipped with rigid wires wrapped. In the flexible version, without the corolla, it can be employed for light operations, such as beating egg whites. With the corolla, on the other hand, the ustensil becomes more rigid and can be used for thicker blends such as creams and pastes... "We often blame the pastry for being too complex, I like the idea that these tools contribute to put the pastry within the reach of all, by getting to the point " (Matali Crasset). "In pastry, the shape of tools arises from their function" (Pierre Hermé).
